Clean Eating Recipe #3: Grecian Goddess Lettuce Wraps

The Grecian Goddess Lettuce Boats incorporate lettuce and low-calorie Greek Yogurt tzatziki sauce to tantalize your taste buds and are certain to make you come back for more! Plus these little morsels won't challenge that gorgeous, Grecian, goddess body you've worked so hard for! :)

Leftover Fajita Chicken with Onions and Peppers
8 Whole Romaine Lettuce Leaves
Greek Tzatziki Sauce

Rinse and dry lettuce leaves, break in half. Heat up left over chicken and place a little onion, peppers, and chicken on each piece of lettuce. Add a tablespoon of tzatziki sauce to each and enjoy! You can either have this set up as a buffet, make your own or you can make them and place them on a plate. Easy, peasy, lemon squeezy. Lettuce all say yummy! Hehe.

I have included the recipe for the fajita marinade and the tzatziki sauce below.

Grecian Goddess Tzatziki

1 cup Non-fat Plain Greek Yogurt
1/2 cucumber, diced
1 TSP Fresh or dried Dill
Fresh Squeezed Lemon Juice, to taste
Pinch of Salt and Pepper, to taste

Mix all ingredients together. It is best to let this sit overnight in the fridge to allow the flavors to melt together.

Chicken Fajita Marinade Ole

1 tsp Minced Garlic
1 tsp Minced Onion
3/4 tsp Cumin
3/4 tsp Oregano
1/2 tsp Cilantro
black pepper and salt to taste
1/4 cup each of lime and orange juice

You can add more or less of the herbs and spices according to what your taste buds like. I use this particular amount of each.

Mix all ingredients together and pour about half over the chicken. Marinate at least four hours. Use the other half for your peppers and onions. I always cook mine in a skillet in a little olive oil. I serve this with either romaine lettuce wraps or tortillas, sour cream and cheese for the kiddos. I also make my clean guacamole recipe and serve that with three-ingredient tortilla chips. We will save that little gem for another day!
